The monovarietal Lea EVO oil is an extra virgin olive oil obtained using 100% of the Lea variety, which is an indigenous variety of the Piceno area that has almost disappeared because of its own low productivity and the difficulties related to the management of the tree, however, it is a good pollinator of the Ascolana Tenera.
From this variety it is possible to obtain an olive oil with a medium to strong fruitiness and with hints of almond and artichoke, it has a bitter and intense spicy flavour.
It is a variety very rich in polyphenols and antioxidants.
It is harvested in October, usually at the beginning, a period in which begins the fruit’s veraison, which is a bit later than the Ascolana Tenera and the Rosciola ones.
The olive oil is obtained using a continuous two-stage extraction system and after that the product is filtered and bottled.
It perfectly pairs with all the meat dishes, which require a bitter and spicy olive oil that can enhance the fragrance of the dish.
