The monovarietal in variety Rosciola EVO olive oil is an extra virgin olive oil obtained using 100% of Rosciola variety, which is one of the best pollinating trees of the Ascolana Tenera olive.
This variety has an early harvest and it is possible to pick olives in the middle of September, in order to avoid that this very soft olive would split apart causing its own oxidation.
This olive oil is obtained using a continuous two-stage extraction system and then it is filtered and bottled.
It is a very delicate olive oil with hints of yellow ripe fruit such as peach and banana and slightly bitter and spicy sensations. This olive oil pairs well with fish dishes, vegetables and bakers’ confectionery.
