The Ascolana Tenera olive oil is highly sought after for its aromas and it is greatly valued by chefs for its lightness and slightly bitter flavour.
This olive oil is rich in polyphenols, substances that are highly degradable due specifically to light and oxygen, therefore we bottle it in bottles made of stainless steel, material in which it is stocked in our warehouse as well.
The stainless steel is the best material to ensure that the olive oil will retain its original flavour, aromas and colour even several months after milling. All these procedures make our olive oil the one and only way to enjoy this land even several months after and several kilometres away.
Our extra virgin olive oil has a very low acidity level and fruit aromas recalling tomato, artichoke and almond. It is rich in polyphenols, omega 3, omega 6 and these all are substances that contribute to good health.
In order to ensure quality, it is important to bring only the best olives to the olive press and to perform the extraction the same evening of the day in which they were harvested. Only in this way it is possible to have a great olive oil and prevent oxidation.
Our olive oil is cold milled using a continuous two-stage system, at a temperature not exceeding 28°C.
